Salad was definitely on the menu for S1 pupils from Bo'ness Academy this week, as they first in line this week to buy a brand new Marks & Spencer salad - designed by the pupils themselves!

The Fruity Fiesta Salad, which was created by a winning team of four students from the school - Gemma Angus, Louise Murray, Fraser Wilson and Ross Nimmo.

The pupils created the salad as part of a project with Bo'ness-based Caledonian Produce, one of M&S' suppliers, and Determined to Succeed, the Scottish Government's strategy to encourage enterprise in education. They were challenged to create a brand new, healthy side salad which would appeal to younger customers.

The winning team, three runner-up teams and Fiona Hyslop MSP got an exclusive preview of the product at M&S at The Gyle centre, before it went on sale to the public in stores across Scotland on Wednesday 10th June.

The pupils spent 12 weeks designing the Fruity Fiesta Salad - including everything from coming up with ingredients and a name for the product, to designing the packaging and calculating a suitable retail price.

Ross Nimmo, one of the pupils on the winning team, said: "It was really exciting to have our salad chosen as the winner and it's brilliant to think that people across Scotland can buy our Fruity Fiesta Salad.

"It was nerve-wracking pitching to the judging panel and team at Marks & Spencer, but we worked very hard to come up with the salad and are really proud of the final product."

The Fruity Fiesta Salad will be priced at £1.99, with 10% of all revenue from the product being donated to Bo'ness Academy. The salad is made up of a mix of wild rice and fluffed rice with peppers, carrot and mango with a sweet chilli dressing.
